We are big fans of Texas Roadhouse, especially their side dishes. While you can definitely serve this delicious chili recipe as a main dish, it’s great when served as a side to steak, chicken or even hamburgers.

So pull out the crockpot (or your chili pot), throw in a batch of Texas Roadhouse Rolls, and get ready for a cozy cup of chili inspired by Texas Roadhouse!

Ingredients

This recipe has quite a few ingredients, but don’t worry – most of them are pantry staples! You can use whatever kind of steak is on sale – we have used different varieties without issue:

  • 1 pound steak
  • 1/2 white onion
  • 1 tbsp minced garlic
  • 1 can rotel
  • 2 cans chili beans
  • 2 cups beef broth
  • 1/2 cup masa harina
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tbsp italian seasoning
  • 1/2 teaspoon onion powder
  • 1 teaspoon chili powder

Directions

  1. Dice the steak into tiny, bite-sized pieces.
  2. Heat a skillet with some oil over medium heat and brown the steakwith the onions.
  3. Place all the ingredients in a slow cooker and stir until combined
  4. Cook on low for six hours or high for three.
  5. Alternatively, if you want to cook it on the stove top, you can put all the ingredients in the pot, cover it, and let it simmer for several hours, or until it is heated all the way through.

How we developed this recipe

We spent a good amount of time trying to nail this Texas Roadhouse Chili Recipe. We ordered it several times from Texas Roadhouse to get a better idea of what kind of meat was in it, the beans, etc.

We originally tried different beans, but the chili beans from the can really gave it to the teaste that we were looking for.

I do think that we finally nailed it, and you can enjoy one of the best side dishes they have to offer from home. Keep in mind that this is not meant to be a traditional slow cooker Texas Chili – it is based on the chili served at our local Texas Roadhouse in Colorado.

Fun fact – Texas Roadhouse wasn’t even founded in Texas. It was founded in Indiana!

WHY ARE THERE BEANS IN THIS. A TEXAS CHILI RECIPE NEVER HAS BEANS.

I hear you! I know Texans are very protective of their chili. However, that doesn’t stop the fact that the Texas Roadhouse I go to definitely DOES use beans, and I think the vast majority do as well (this may vary depending on the region). you can absolutely leave out the beans!

Why is Texas roadhouse chili special?

You might have tried several chili recipes, but the Texas roadhouse chili’s recipe stands out from the crowd. That’s because it is a deviation from the traditional chili recipe. Unlike the traditional chili, this recipe doesn’t use tomato sauce. Instead, it is made from meat, chili pepper, herbs, and seasonings. Above all, it also uses beef broth that brings richness and tons of flavor to the dish. It does contain beans, but you can read more about that bleow.

Can you make Texas roadhouse chili in an instant pot?

The best way to get maximum flavor out of the ingredients is by slow cooking it for about six hours. Some people like to speed up the process and cook it for 3 hours. The more you cook, the more flavors you get.

However, if you are in a hurry or don’t have time or patience to wait for that much time, you can speed up the process by cooking it in an Instant Pot. Because the main purpose of an instant pot is to cook the ingredients at a fast rate, you can cook this chili recipe in an instant pot as well.

However, remember that you might not get the depth of meaty flavors you look for this way. That’s because the flavors come from slowly cooking the ingredients.

Just precook the meat as mentioned in the recipe below and then cook it for 10 minutes on manual high pressure with a quick pressure release.

How long does it take to cook?

It takes six to three hours depending on the heat source and what temperature you are cooking it on.

What type of steak did you use?

I just used a sirloin that we had in the freezer that I cut up. You could also purchase some stew meat or beef cubes, and I think that would work just fine

Why can’t I find rotel in my grocery store? What should I substitute?

If you cannot find Rotel in your grocery store, you can substitute other canned chilis or tomatoes but my personal preference is Rotel, as it gives the chili a very good flavor.

This recipe says to stir everything together. Do I need to cook this on low/high heat first?

No, you don’t have to cook it first, beyond the meat. You can mix all the ingredients in the slow cooker and put them on low/high heat.

Can I use less beef stock?

It depends on how much you want to reduce the sodium intake and if you want a thicker chili or not. Every time I make this, I use the full amount of beef stock and it is perfect for us.

Can I cook this on high heat?

Yes you can cook it on high heat but be sure to check back every hour or so just to stir it if possible to prevent any burning around the edges.

Can I use dried italian seasoning?

Yes, you can use the dried version. However, I highly recommend using fresh if possible because this has a much better flavor. Plus tastes even better the next day after flavors have had more time to blend together while in the fridge.

How do I make this low fat/low calorie?

I would recommend using lean steak or even ground turkey and making sure you drain the fat from it as much as possible. You can also cook your meat beforehand to make sure that there isn’t excess fat on the steak itself. Also, replace the beef broth with either low sodium chicken or vegetable stock or water.

Can you use ground beef instead of cubed steak?

The Texas Roadhouse Chili has chunks of steak, but if you want to use ground meat, you definitely can. Just make sure it is cooked well before adding your other ingredients together at the beginning of the recipe.

Can I substitute enchilada sauce for rotel?

It’s really a different ingredient than rotel, so it would change the overall taste and texture of the recipe. However, if all you have is a can of green chile enchilada sauce, you can certainly try it!

What are some variations

  • Use red onions instead of white
  • Kidney Beans instead of chili beans (this will change the flavor)
